Top Chef Season 3 winner Hung Huynh (Website) is bringing a bold new culinary concept to town. His pop-up Baddie Bird (Instagram) will focus on Sichuan-style hot chicken, offering a spicy, flavor-forward take on fried chicken with Chinese-inspired heat and aromatics.

Although exact dates haven’t been announced yet, interested fans can follow along via Instagram for updates and upcoming events. He already hosted a trial pop-up in mid-September at Mills Market in the Mills 50 District that everyone’s been talking about in the foodie forums.

Last month’s menu featured three-piece tenders for $8, “The Baddie Sammie,” which featured seasoned or saucy chicken tenders on a potato bun, pickled daikon and carrot, and cilantro. Sides have included Viet Cajun rice with andouille sausage, corn, and bell pepper; Tiger Salad with celery, cucumber, cabbage, scallion with ginger lime dressing, and fried shallot; purple yam tempura fries, Saigon street corn, and coconut sticky rice.
