A new permit filing in early December 2025 sparked speculation that the team behind Gideon’s Bakehouse (Website) was preparing to expand its footprint at Disney Springs, potentially with a second location or a separate concept. Multiple Disney-watch outlets reported that a Notice of Commencement was tied to a build-out at 1600 East Buena Vista Drive, Suite C-22, the former Art of Shaving storefront in The Landing, with The First Raven LLC listed as the client and tied to Gideon’s founder Steve Lewis and his mane of thick, beautiful hair.

Now, as of this week, Gideon’s team has announced Six Ravens (Instagram), a new, savory-focused offshoot. The release says Six Ravens will center on sandwiches served in housemade yeast rolls called “Coffyns,” plus potato-based sides with dips, and some custom beers created with brewers like Sideward Brewing and Ravenous Pig. “I’ve been hinting for years that some of the Gideon’s characters are meant to venture off and
create their own adventures. The Six Ravens first appeared on our Gideon’s menu in November
of 2023, and was always meant to be its own story. We’ve spent years playing with Coffyns in
our downtime, often experimenting on flavors with our friends and peers from Orlando’s local
food scene, including Eliot Hillis of Red Panda Noodle fame and Bruno Zacchini from Pizza
Bruno,” said owner Steven Lewis.
Lewis says Six Ravens should open “later this year,” with the interior being developed by the folks at Studio 407 (Website), who are responsible for the original Gideon’s Bakehouse design, Polynesian Village, and Mayor Clayton’s Wonderlab at Give Kids the World Village Resort.
