VIDEO: A first look inside Six Ravens, the Gideon’s Bakehouse team’s new Disney Springs concept

Six Ravens (Instagram), the savory-focused spinoff from the team behind the hit cookie giant Gideon’s Bakehouse (Website), is now open in The Landing at Disney Springs, and Orlando Shine stopped by to see the space and try the menu firsthand.

The concept was first announced in January, when Gideon’s founder Steve Lewis revealed plans to build out the former Art of Shaving storefront into a standalone restaurant built around the Six Ravens characters that first appeared on Gideon’s menu in 2023. The interior was designed by  Studio 407 (Website), the same firm behind the original Gideon’s Bakehouse buildout (and Polynesian Village).

It’s a fun fast food presentation but everything is scratch made and much of the menu is collabs with local restaurants to create bread crumbs back into the community. Every Coffyn’ comes with a sauce. Eat it without and it’s approachable for kids but use that sauce and BOOM! Adults have some fun too.”

The entrance experience mirrors its sister location just around the corner, with guests being greeted by someone who opens the door for them and hands over a paper menu before they step into a dark, quick-service ordering room. The space is dominated by a massive stone wall carved with depictions of the Six Ravens themselves, a group of skull-faced characters inspired by the legend of a murder of resident ravens in the Tower of London who give the concept its name and its story. Guests order in that same room, wait there for their food, and then head back outside, since there’s no interior seating. The butt-level planters lining the walkway outside serve as great places to sit, though Disney Springs has plenty of public seating options around every corner. Because Placemaking.

The menu centers on sandwiches built more like empanadas or hand pies than traditional sandwiches, though they’re baked and not fried, with a bready exterior called a “Coffyn” wrapped around each filling. The Pleasant Patty, a classic cheeseburger topped with American cheese and dill pickle bits, comes encased in a sesame seed-sprinkled Coffyn and is served with a Pink Salamander dipping sauce. Every sandwich on the menu comes with its own recommended sauce pairing.

Sides currently include Tell Tale Tatties, a mini bucket of baked smashed potatoes seasoned with what the menu calls “the king’s spices” and served with honey mustard.

Six Ravens also offers local beers from Central Florida partners, including Sideward Brewing, Crooked Can, and The Ravenous Pig, continuing the collaborative approach Lewis described when the concept was announced, which included input from chefs like Eliot Hillis of Red Panda Noodle and Bruno Zacchini of Pizza Bruno during the recipe development process.
