
RENDERING VIA 86 HOSPITALITY GROUP
Chef Michael Collantes (Website) and his 86 Hospitality group are opening Nomikai by Sushi Saint (Instagram) at Icon Park on International Drive, targeting a late July or early August opening.
Collantes is behind some of Orlando’s most decorated dining, including Soseki Omakase, which holds a Michelin star; Sushi Saint earned a Michelin Bib Gourmand, and Perla’s Pizza in Winter Park. Nomikai is the largest concept he’s attempted yet, with an estimated 60 seats, and is the first that he’s planted in Orlando’s tourist corridor.
“Coming from 10- to 30-seat restaurants, this is my big restaurant,” Collantes said. “But we still want intimacy. We want storytelling.”
Nomikai is a Japanese term for a celebratory social gathering, and the menu is built around that idea. It starts with Sushi Saint staples like salmon aguachile, hamachi truffle potato, traditional rolls, a large-format omakase platter, and expands into shareable large plates like koji-marinated dry-aged tomahawk, bone-in ribeye, whole branzino, miso king salmon, and lobster noodles. A cocktail program drawing on Japanese ingredients is expected to round it out.
Collantes described the interior as “Tokyo neo-cyberpunk” with dark and moody neon blues and purples, original artwork, and a soundtrack of electronica, house, and lounge music.
