Holy City Zoo BBQ bringing global barbecue to Longwood this April

Holy City Zoo BBQ (Instagram) is getting ready to open its doors in Longwood, and if you were at the Taste of Lake Mary this week, you may have already gotten a preview. The new “globally inspired” barbecue restaurant had a stall at Monday night’s event at the Lake Mary Marriott, serving up a Kalua pork sandwich that gave attendees an early taste of what’s coming.

Holy City Zoo BBQ is targeting an early April opening at 190 S. Ronald Reagan Boulevard [GMap] in Longwood, with a ribbon-cutting currently scheduled for April 7. The restaurant comes from husband-and-wife team Greg and Kristina Gaardbo, who bring more than 15 years of barbecue experience and previously ran a restaurant in Chicago.

The concept blends traditional American barbecue with flavors picked up from years of international travel. The menu will feature Texas-style brisket, house-made pastrami, house-made steakhouse bacon, Korean-style short ribs, smoked porchetta, and dishes inspired by Spain, Mexico, and Portugal.

The space will seat around 140 guests across an indoor dining room and an outdoor beer garden, with an industrial aesthetic, vintage cartoons, and 80s music.
