The Moderne (Website) and Red Panda Noodle (Instagram) will team up for a one-night pop-up called Post Moderne at The Moderne’s Mills 50 bar on Wednesday, October 7, from 6 to 10 p.m.
In case you live under a foodless rock, The Moderne opened back in December 2022 under chef-owner Michael Nguyen, a self-taught cook who left pharmacy studies to help run his immigrant parents’ restaurant before building his own. The Art Moderne-inspired lounge is known for shareable tapas that pull from Vietnamese, Korean, Japanese, Chinese, Italian and Latin influences, with dishes like Korean fried chicken, beef bulgogi with scallion pancakes and miso cream noodles anchoring the regular menu. And it’s trendy as hell.
Red Panda Noodle is led by Eliot Hillis and Seth Parker, who spent five years together at the sorely missed Orlando Meats before striking out on their own to focus on handmade noodles. The pair have built a following through pop-ups and an ongoing food truck residency at A La Cart City in downtown Orlando, serving everything from lo mein and udon to tteok-bokki and hand-pulled biang biang noodles.
For Post Moderne, the two kitchens are building a shared menu featuring dishes like liangfen; mung bean noodles tossed with mushroom oil pickle, cucumber, ginger salt and herbs, alongside a dips course featuring durum, pickles, curried dahl, yoghurt hummus and a ma la French onion dip. A gnocchi course will reimagine the Italian staple as a noodle dish with gochujang, cheddar, cucumber kimchi and a panko crouton, while a ramen noodle bowl brings together chicken sausage, corn broth, corn ribs, chimichurri, egg and tomami noodles. They’re also whipping up a brown sugar cheesecake finished with coconut jam and cronchies.
